It has been cold and humid in Switzerland… I am suddenly hungry in the mornings and craving something warm. Something else than porridge and spelt-semolina. I had an overripe banana in my kitchen and had been looking for tasty buckwheat recipes for a while now… and this is what I came up with…
Buckwheat is a wonderful gluten-free grain with many healing properties. Among one of them: increased circulation in hands and feet. This due to a bioflavonoid called “rutin”. Warm hands and feet…exactly what I need!!
- 2 cups buckwheat flour
- 1/2 tsp baking soda
- a pinch of salt, cardamom, cinnamon and vanilla
Mix well together.
- 1 cup almond-rice drink
- 1/2 cup water
- 1 ripe banana, mashed
Blend together and incorporate into the flour. Let sit for 10 minutes. Fry in a pan. Finished. Indulge. Add fruits or the secret weapon…blueberries!!
* P.S: buckwheat flour is available in all organic shops. In Switzerland you can also find it at Migros under the organic brand “Alnatura”, as well as the almond-rice milk.
Good to Know
The fried pancakes are very tasty cold as well! Store in the fridge and eat within a week.
I didn’t use the whole dough at once and baked the rest later in the afternoon. Amazing buckwheat cookies turned out, crunchy on the outside, light and fluffy on the inside! I baked them at 200°C for 15min.
