Raw Cauliflower Soup with Red Pepper Paté

The first thing I noticed apart from the beautiful colours was the intense taste!! Raw Food tastes different and totally exotic to me… I loved those aromatic flavours!

Ingredients for the Cauliflower Soup:

  • 1/2 cauliflower
  • 1 tin coconut milk (2 cups)
  • 1/2 lemon, juice
  • 1 tsp turmeric powder
  • 1 inch fresh ginger
  • fresh herbs from our garden (chives, parsely, oregano)
  • 1 tsp salt

Blend everything in a food processor or blender until thick and smooth, add water to your preference. I slightly warmed the soup and topped it with organic hemp oil and hemp seeds.

Ingredients for the Red Pepper Paté:

The paté was made by my lovely neighbour after a recipe from raw food chef & author Mimi Kirk:

  • 1 cup walnuts
  • 1/2 cup cashews
  • 1 red pepper cut into chunks
  • 1 onion
  • 3 tbsp tamari
  • 1 tbsp olive oil
  • a pinch of salt
  • 1/8 tsp curry powder
  • 1 clove garlic

Break down the walnuts and the cashews in a food processor. Add the rest of the ingredients and pulse until smooth.

Cut your favourite vegetables in finger-sized sticks and enjoy with the paté!!
